Ingredients:

  • 16 cremini mushrooms
  • 1 yellow onion
  • 2-4 garlic cloves
  • 2 tablespoons extra virgin olive oil
  • 1 package frozen chopped spinach
  • A pinch of ground nutmeg
  • 1/4 teaspoon nutmeg
  • 2 cups part-skim ricotta cheese
  • 8 tablespoons fat-free chicken broth
  • 1 cup Gorgonzola cheese
  • 8 tablespoons heavy cream
  • 8 lasagna noodles
  • 1/2 cup mozzarella cheese

Recipe Instructions:

  1. In a medium skillet over moderate heat, sauté mushrooms, chopped onions, and garlic in oil until mushrooms give off their juices and darken, and onions are tender, about 7 or 8 minutes. Season with salt and pepper; the salt will help draw water out of the vegetables as they cook.

  2. Add dry chopped spinach to the pan and heat through for 1 minute. Adjust seasonings with salt, pepper, and a little nutmeg.

  3. Add ricotta and stir into the mixture to heat cheese through, 1 minute longer. Remove pan from heat but leave in the warm skillet.

  4. Heat broth in a small pan over moderate heat. Melt Gorgonzola into broth and bring the liquid to a bubble. Stir in cream and thicken sauce for 2 minutes.

  5. Place cooked lasagna noodles on a large work surface or cutting board. Spread lasagna noodles with a layer of spinach-mushroom filling.

  6. Roll up pasta and arrange the 8 bundles in a shallow casserole dish.

  7. Pour warm sauce over roll-ups and top with mozzarella.

  8. Place casserole under the broiler to melt cheese.

  9. Serve with steamed asparagus and broiled tomatoes.

Recipe Notes:

  • Customize Your Fillings: Feel free to get creative with the fillings for your lasagna roll-ups. Try adding sautéed vegetables like bell peppers or zucchini for an extra burst of flavor and nutrients.

  • Make-Ahead Option: You can assemble the lasagna roll-ups ahead of time and refrigerate them until you’re ready to bake. This makes it a convenient option for busy weeknights or entertaining guests.

  • Serve with Style: Garnish your plate with fresh herbs like basil or parsley for a pop of color and added freshness. Pair with a glass of your favorite wine to complete the meal.

  • Leftover Love: These lasagna roll-ups are just as delicious the next day, making them perfect for leftovers. Simply reheat in the oven or microwave for a quick and satisfying meal.
