Ingredients:

  • 3 heads broccoli
  • 1/4 cup butter
  • 1 tablespoon butter (for breadcrumbs)
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 ounces cream cheese
  • 1/2 cup gorgonzola cheese (or blue cheese)
  • 1 1/3 cups bread crumbs

Instructions:

Step Description
1 In a large pot, bring about 3 quarts of water to a boil over high heat.
2 Rinse the broccoli heads and trim off the tough stem ends. Cut the broccoli into one-inch pieces.
3 Boil the broccoli in the pot of boiling water until barely tender, about 3-5 minutes. Drain and set aside.
4 Rinse out the pot and dry it.
5 In the same pot, melt 1/4 cup of butter over medium heat.
6 Stir in the all-purpose flour until smoothly blended. Cook until the mixture is bubbly, about 1 minute.
7 Gradually add the milk, stirring constantly over medium-high heat until the mixture is boiling and thickened, about 3 minutes.
8 Add the cream cheese and gorgonzola cheese, whisking until smoothly blended. Stir in the cooked broccoli.
9 Pour the mixture into a small casserole dish (approximately 2 1/2 to 3 quarts).
10 In a blender or food processor, pulse the bread cubes until coarse crumbs form, yielding about 1 1/3 cups.
11 In a small bowl, mix the bread crumbs with 1 tablespoon of melted butter until well combined.
12 Sprinkle the breadcrumb mixture evenly over the top of the broccoli mixture in the casserole dish.
13 Bake the casserole at 350°F (175°C) until it’s hot in the center and the crumbs are golden brown, typically 20 to 30 minutes.

Enjoy your delicious Gorgonzola Broccoli Casserole hot out of the oven, with its creamy texture and savory flavors complementing the tender broccoli perfectly. This comforting dish is sure to become a favorite for cozy winter evenings or busy weeknights, offering a delightful blend of convenience and indulgence. 🥦🧀
