Instructions

  1. Prepare the Veggie Sausages:
    Start by heating the vegetable broth and keeping it warm in a separate pot. For the veggie sausages, blend the sun-dried tomatoes, toasted cashews, Β½ red onion (roughly chopped), and the fresh chili (seeds removed) in a food processor until smooth.

    Add rice flour, flax seeds, salt, and pepper. Mix everything together until well combined. Transfer the mixture to a bowl and add water and olive oil. Knead the dough with your hands until it’s fully mixed and smooth.

  2. Form the Sausages:
    Divide the dough into 4 equal portions. Roll each portion into a sausage shape. Wrap each β€œsausage” in a piece of cheesecloth, securing the ends with kitchen twine like a candy wrapper.

  3. Cook the Sausages:
    Place the wrapped sausages into the simmering vegetable broth and cook for 45 minutes. Allow the sausages to cool in the broth. Once cooled, remove them from the broth and carefully remove the cheesecloth. Let the sausages rest on a cutting board for about 30 minutes.

  4. Caramelize the Onions:
    While the sausages are resting, prepare the caramelized onions. Peel and slice the remaining 2 red onions. Heat a little olive oil in a skillet and sautΓ© the onions until softened. Add the brown sugar and continue cooking on low heat for about 2 minutes until the onions begin to caramelize. Deglaze the pan with balsamic vinegar, stirring to coat the onions. Remove from heat and let them cool.

  5. Prepare the Avocado and Cheddar:
    Cut the avocados in half, remove the pits, and scoop out the flesh. Slice the avocado into thin slices and drizzle with lemon juice to prevent browning.

    Slice the cheddar cheese into thin pieces, enough for 2-3 slices per hot dog bun, depending on your taste preference.

  6. Cook the Veggie Sausages:
    Heat a little olive oil in a skillet. SautΓ© the cooked veggie sausages for a few minutes until they are golden brown and slightly crispy on the outside.

  7. Toast the Buns:
    Slice the hot dog buns and lightly toast the inner sides in the same skillet or on a griddle until golden brown.

    Open the toasted buns and place 2-3 slices of cheddar cheese inside each one. Add one veggie sausage per bun. Then, carefully heat them in the skillet or oven until the cheese melts and the bun crisps slightly.
