Ingredients:

4 tsp Salt
1/2 cup Wild rice
1 1/2 cups Basmati rice
2 tsp Fresh ginger
1/2 tsp Ground nutmeg
1/2 tsp Ground cumin
2-3 tbsp Fresh lemon juice
1/2 cup Green onion
Dried currants
1/2 cup Marsala
1/2 cup Pine nuts
Olive oil
Black pepper (to taste)

Instructions:

  1. Cook the Rice:

    • In a medium saucepan, bring 1 1/2 cups of water and 2 teaspoons of salt to a boil.
    • Add the wild rice, reduce heat to low, cover, and simmer for about 1 hour, until the rice is tender.
    • In another medium saucepan, combine the basmati rice and the remaining 2 1/2 cups water. Let it sit for 1 hour.
    • After soaking, bring the basmati rice to a boil. Add the remaining 2 teaspoons of salt and the fresh ginger. Reduce heat to low, cover, and simmer for about 15 minutes, until the rice absorbs all the water and becomes tender. Discard the ginger.
  2. Prepare the Vinaigrette:

    • In a small bowl, whisk together the ground nutmeg, ground cumin, and fresh lemon juice.
    • Gradually add olive oil while whisking until well combined. Season with salt and black pepper to taste.
  3. Assemble the Salad:

    • While the rice is still warm, combine the cooked wild rice and basmati rice in a large bowl.
    • Pour the prepared vinaigrette over the rice mixture and toss to coat evenly.
    • Stir in the chopped green onions, dried currants, any remaining Marsala, and pine nuts.
    • Taste and adjust seasoning if needed.
  4. Serve:

    • Allow the salad to cool to room temperature before serving.
