A delightful twist on a classic sponge cake, this savory version features Grana Padano DOP, an exquisite Italian cheese that adds depth and richness to every bite. Perfect for a sophisticated appetizer, this dish combines light and fluffy sponge layers with delicate smoked trout, aromatic herbs, and a creamy Grana Padano sauce.

Ingredients

Ingredient Quantity
Grana Padano DOP (grated) 100g
All-purpose flour (00) 160g
Eggs 330g (approx. 6 eggs)
Sugar 50g
Fine salt 10g
Grana Padano DOP (grated) 90g
Fresh cream (liquid) 60g
Smoked trout (shredded) 200g
Chives (fresh, chopped) to taste
Wild fennel (fresh, chopped) to taste
Grana Padano DOP (for garnish) 100g

Instructions

  1. Prepare the Sponge Cake Base:
Begin by placing the eggs and sugar in a stand mixer with a whisk attachment. Beat the mixture at high speed for several minutes until it becomes light and frothy.

  2. Sift the Dry Ingredients:
In the meantime, sift together the all-purpose flour and Grana Padano DOP to ensure a light, airy texture.

  3. Incorporate the Dry Ingredients:
Gradually add the sifted flour and cheese mixture to the egg mixture. Using a spatula, gently fold the ingredients together with delicate, upward motions, ensuring you do not deflate the airy batter.

  4. Bake the Sponge Cake:
Once the mixture is well combined, pour it into a 30×40 cm baking pan lined with parchment paper. Spread the batter evenly with a spatula to achieve a uniform thickness. Bake the sponge in a preheated static oven at 170°C (340°F) for about 30 minutes, or until the cake is golden and springy to the touch.

  5. Prepare the Grana Padano Sauce:
While the sponge cake is baking, prepare the creamy Grana Padano sauce. In a small saucepan, combine the fresh cream and grated Grana Padano. Stir continuously with a whisk until the cheese has melted and the sauce is smooth. Once the mixture is well combined, remove it from the heat and set it aside.

  6. Assemble the Dish:
Once the sponge cake has finished baking, remove it from the oven and allow it to cool slightly. Prepare thin slices of the cake, cutting them into individual rounds or discs.

    Layering Instructions:

    • Start by placing a round of sponge cake on a plate.
    • Add a generous layer of shredded smoked trout on top.
    • Sprinkle finely chopped chives and wild fennel over the fish for a burst of freshness and flavor.
    • Place another sponge cake disc on top, then drizzle with the creamy Grana Padano sauce.
  7. Garnish and Serve:
Finish by garnishing with additional Grana Padano shavings for a beautiful and flavorful touch. Serve the Grana Padano Sponge Cake either warm or chilled, as a unique and delicious appetizer that will surely impress your guests.

Tips for Success:

  • Freshness of Ingredients: The quality of Grana Padano is key to the flavor of this dish. Be sure to use freshly grated cheese for optimal texture and taste.
  • Smoked Trout: If smoked trout is not available, you can substitute with smoked salmon or another mild, oily fish.
  • Herb Variations: Feel free to experiment with other herbs, such as dill or parsley, to suit your personal taste.

Enjoy this savory delight as a sophisticated starter to any meal, or serve it at your next gathering to add a touch of Italian elegance to your appetizer spread!
