Begin by boiling the potatoes in salted water for about 30 minutes, until they are tender but still firm. Once cooked, remove them from the water and allow them to cool slightly. Without peeling, cut the top off each potato and scoop out the flesh using a spoon or a melon baller, leaving about 1 cm of the potato along the sides to form a shell. Set aside the scooped-out potato flesh for later use. -
Grate the Grana Padano
Preheat your oven to 200ยฐC (392ยฐF). On a baking sheet lined with parchment paper, arrange the hollowed potatoes and sprinkle the inner cavities with 20g of grated Grana Padano DOP. Drizzle the potatoes with a small amount of olive oil. -
Prepare the Cabbage and Potato Mixture
Finely slice the red cabbage and set it aside. Thinly slice the onion and combine it with the cabbage in a mixing bowl. Add the scooped-out potato flesh to the mixture. Season with salt, pepper, oregano, and rosemary, and toss to combine thoroughly. Heat this mixture in a pan with a little olive oil, cooking it for about 10 minutes, stirring often until tender. -
