Grana Padano and Vegetable Rolls

Ingredients:

Puff pastry 230g
Catalogna (chicory) 400g
Champignon mushrooms 150g
Grana Padano DOP cheese 50g
Sliced almonds 40g
Garlic 2 cloves

Instructions:

  1. Prepare the Catalogna (Chicory): Start by trimming the ends of the catalogna stalks and cut it into 3 sections. In a large pan, heat a drizzle of extra virgin olive oil with a whole clove of garlic. Once the garlic releases its fragrance, add the catalogna and cover the pan. Allow it to cook down, stirring occasionally, until tender.

  2. Prepare the Champignon Mushrooms: Using a sharp knife, cut off the mushroom stems and peel the caps. Gently wipe the mushrooms with a damp paper towel to remove any dirt. In a separate pan, heat another drizzle of olive oil and sauté a garlic clove. Add the mushrooms, seasoning with salt and pepper. Cook until the mushrooms soften and release their moisture.

  3. Toast the Almonds: In a dry pan, toast the sliced almonds over medium heat for about 3 minutes, being careful not to burn them. Set aside.

  4. Assemble the Rolls: On a clean surface, roll out the puff pastry. Lay the pizza dough on top, ensuring that they align perfectly. Spread the cooked catalogna evenly over the dough, leaving a small border around the edges. Next, layer the sautéed mushrooms over the catalogna. Using a vegetable peeler, slice thin sheets of Grana Padano DOP cheese and place them on top of the mushrooms.

  5. Roll and Cut: Begin rolling the dough from the longer side, ensuring a tight roll. Once rolled, trim off the ends and slice the log into 3 cm thick rounds.

  6. Bake: Arrange the slices on a baking tray lined with parchment paper. Sprinkle the toasted almonds on top for an extra crunch. Place the tray in a preheated oven at 180°C (350°F) and bake for about 25 minutes, or until the rolls are golden brown. Once baked, remove from the oven and allow to cool slightly before serving.
