Prepare the Catalogna (Chicory): Start by trimming the ends of the catalogna stalks and cut it into 3 sections. In a large pan, heat a drizzle of extra virgin olive oil with a whole clove of garlic. Once the garlic releases its fragrance, add the catalogna and cover the pan. Allow it to cook down, stirring occasionally, until tender.

Prepare the Champignon Mushrooms: Using a sharp knife, cut off the mushroom stems and peel the caps. Gently wipe the mushrooms with a damp paper towel to remove any dirt. In a separate pan, heat another drizzle of olive oil and sauté a garlic clove. Add the mushrooms, seasoning with salt and pepper. Cook until the mushrooms soften and release their moisture.
