Ingredients:

  • For the White Sauce:
    • 1/2 cup butter
    • 1 cup margarine
    • 2 cups fresh mushrooms, sliced
    • 2 shallots, minced
    • 1/2 cup green onions, chopped
    • 1/2 lb scallops
    • 1/2 lb shrimp, peeled and deveined
    • 1/2 lb lump crabmeat
    • 3 tbsp lemon juice
    • 1 tsp cayenne pepper
    • 1 tbsp Grand Marnier
    • 1 recipe of white sauce (see instructions below)
    • 4 cups cooked white rice
    • 6 slices Swiss cheese

Instructions:

  1. Prepare the White Sauce:

    • In a saucepan or skillet, melt butter over low heat.
    • Add flour and cook, stirring constantly, for 3-5 minutes until the mixture is smooth and bubbly.
    • Gradually add milk, stirring constantly until the sauce thickens and becomes smooth, about 20 minutes.
    • Stir in Worcestershire sauce. Set aside.
  2. Prepare the Casserole:

    • Preheat your oven to 350°F (175°C).
    • In a large skillet, melt butter over medium heat. Add mushrooms, shallots, and green onions. Sauté lightly until tender.
    • Add scallops, shrimp, and crabmeat to the skillet. Sprinkle lemon juice over the seafood.
    • Season with cayenne pepper and pour in Grand Marnier. Simmer for about 10 minutes until seafood is cooked through.
    • Stir in the prepared white sauce and mix well to combine.
  3. Assemble the Casserole:

    • Spread half of the cooked rice evenly in the bottom of a 13×9-inch glass casserole dish.
    • Layer half of the seafood mixture on top of the rice.
    • Repeat the layers with the remaining rice and seafood mixture.
    • Top the casserole with slices of Swiss cheese.
  4. Bake:

    • Place the casserole dish in the preheated oven.
    • Bake for 30 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden on top.
