They’re aptly named for their tendency to puff up like little pillows when they bake. Ingredients:
- 4 eggs
- 3 cups flour
- 4 1/4 cups powdered sugar
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1/2 – 1 tablespoon anise seed
Instructions:

2. | Continue beating while slowly adding sugar. Then, add flour, baking powder, lemon peel, and anise extract. Beat together until completely combined. |
3. | On a well-floured board, roll out some of the dough with a plain rolling pin to about 1/2″ thickness. Lightly flour the Springerle rolling pin and roll it firmly across the dough to impress patterns, aiming to keep the dough about 1/2″ thick. |
4. | Carefully cut cookies apart between the patterns. |
5. | Place cookies 1/2″ apart on ungreased cookie sheets, and allow them to dry uncovered overnight (approximately 12 hours). |
6. | When ready to bake, preheat the oven to 250-300°F (120-150°C) and place cookies 1/2″ apart on lightly greased cookie sheets. Bake for 25-30 minutes until firm but still white. |
7. | Remove cookies from the oven and transfer them to wire racks to cool completely. |
8. | Store cookies in a tightly covered container along with some anise seeds to preserve their flavor. |
9. | The flavor of these cookies develops fully after about 2 weeks, allowing for a delightful taste experience. |
