Gratinated Gnocchi Skewers Recipe

Grana Padano DOP Cheese (grated) 50g
Potatoes 500g (for the white gnocchi)

Egg Yolk 1 (for the white gnocchi)
Potatoes 350g (for the green gnocchi)
Spinach 200g
Flour (00) 50g (for the green gnocchi)
Salt 5g (for the green gnocchi)

Instructions

  1. Prepare the White Gnocchi:
    Begin by making the white gnocchi. Wash the potatoes and cook them until tender. While still hot, peel and mash the potatoes using a potato masher. Create a small well in the center of the mashed potatoes, add the salt and egg yolk. Mix the ingredients together to form a dough.

  2. Shape the White Gnocchi:
    Divide the dough into small portions and roll them into cylindrical shapes about 2-3 cm thick. Cut them into small pieces to form the gnocchi. Using a gnocchi board or a fork, gently press the gnocchi to form the traditional ridges. Place the gnocchi on a floured surface or a kitchen towel.

  3. Prepare the Green Gnocchi:
    Wash the spinach and cook it in a small amount of salted water. Simultaneously, cook the remaining 350g of potatoes with their skins, similar to how you prepared the potatoes for the white gnocchi. Once cooked, drain the spinach and squeeze out any excess water. Finely chop the spinach with a knife.

  4. Make the Green Gnocchi Dough:
    On a clean surface, combine the flour, cooked spinach, and mashed potatoes. Mix everything together to form a dough, much like you did for the white gnocchi. Once the dough is ready, divide it into portions and roll it into 2-3 cm thick filaments, then cut into small gnocchi pieces. Once again, use a gnocchi board to create the traditional ridges, then place the gnocchi on a floured surface.

  5. Cook the Gnocchi:
    Bring a pot of salted water to a boil and add a splash of olive oil. First, cook the white gnocchi in the boiling water until they float to the surface. Transfer them to a bowl and drizzle with a little olive oil. Next, cook the green gnocchi in the same way, then place t
