Instructions

  1. Prepare the Beans
    Begin by soaking the broad beans overnight in ample water to soften them. After soaking, drain and rinse thoroughly.

  2. Pre-cook the Beans
    Place the soaked beans in a pressure cooker with 2 cups of water and a pinch of salt. Cook for 6–8 whistles until the beans are tender. Let the pressure release naturally.

  3. Preheat the Oven
    Preheat your oven to 180°C (350°F) to prepare for the final bake.

  4. Sauté the Vegetables
    In a skillet, heat a drizzle of olive oil over medium heat. Add the bay leaves and celery and sauté for about 2 minutes. Next, add the sliced onions and chopped garlic, cooking until the onions turn translucent.

  5. Add Carrots and Zucchini
    Toss in the carrot wedges and cook until they soften slightly, about 5 minutes. Add the zucchini and continue cooking until all vegetables are tender, roughly 10 more minutes.

  6. Combine Beans and Sauce
    Stir in the boiled beans, allowing them to absorb the flavors from the vegetables. Add the homemade tomato puree, and season with sugar, dried oregano, cinnamon powder, salt, and pepper.

  7. Simmer the Sauce
    Let the mixture simmer for about 10 minutes, allowing the tomato sauce to reduce and flavors to meld.

  8. Bake the Dish
    Transfer the mixture into a baking dish. Bake in the preheated oven for 10 minutes to allow the sauce to thicken further and the beans to develop a tender, infused texture.

  9. Garnish and Serve
    Remove from the oven, sprinkle with freshly chopped parsley, and serve warm.
