Beef Gyros in Pita

Ingredients:
- 1 lb beef round tip steak, thinly sliced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 3 tbsp olive oil
- Feta cheese, crumbled
- 2 plum tomatoes, chopped
- 1 red onion, thinly sliced
- Salt and pepper, to taste
- Pita pockets, for serving
Instructions:

Prepare the Beef:
- Stack the beef steaks and cut them lengthwise into halves, then crosswise into 1-inch wide strips.
- In a bowl, toss the beef strips with minced garlic and dried oregano until evenly coated.

- Heat 2 teaspoons of olive oil in a large nonstick skillet over medium-high heat until hot.
- Add half of the seasoned beef to the skillet, spreading it out to ensure even cooking. Stir-fry for about 1 minute or until the outside surface of the beef is no longer pink. Be careful not to overcook. Remove the cooked beef from the skillet and set aside.
- Repeat the process with the remaining beef strips.

- Return all the cooked beef to the skillet and heat through over medium heat.
- Season the beef with salt and pepper to taste, adjusting as needed.
