Ingredients:

1 fresh lemon rind
1 honey
30 grape leaves
2 tbsp olive oil
1 onion
1 garlic clove
4 tbsp fresh lemon juice
2 cups cooked rice
1/2 cup dried currant
1/3 cup pine nuts
1 tsp dried dill
1/2 tsp salt
1 chickpeas

Instructions:

  1. In a small bowl, combine the yogurt, 2 teaspoons of dried mint, fresh lemon rind, and honey. Stir well, then cover and chill the mixture.

  2. Rinse the grape leaves under cold water, ensuring they are well-drained. Pat them dry with paper towels, then remove and discard the stems.

  3. Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat. Add the chopped onion and sauté for about 10 minutes until translucent.

  4. Add the minced garlic to the skillet and sauté for an additional minute. Remove the skillet from heat and stir in the remaining dried mint, 2 tablespoons of fresh lemon juice, cooked rice, dried currants, pine nuts, dried dill, salt, and chickpeas.

  5. Preheat your oven to 350°F (175°C). Take the prepared grape leaves and place them on a clean surface, then spoon a small amount of the rice mixture onto each leaf. Roll the leaves, tucking in the sides, to form dolmades. Place them seam-side down in a 13×9-inch baking dish coated with cooking spray.

  6. Drizzle the remaining fresh lemon juice over the stuffed grape leaves, then cover the dish with foil and bake in the preheated oven for about 30 minutes or until thoroughly heated.

  7. Once done, serve the dolmades warm or chilled, accompanied by the chilled yogurt mixture for dipping.
