Greek-Inspired Beef Burrito Recipe from Titis

This flavorful Greek-inspired beef burrito recipe combines tender ground beef with a medley of fresh ingredients and traditional Greek flavors, perfect for a hearty and satisfying meal. The recipe includes steps for making a savory beef filling, a creamy guacamole, and a tangy yogurt spread, all wrapped in warm tortillas. Here’s how to make it:

Ingredients

For the Beef Filling:

  • 1 lb ground beef
  • 1 large onion (red or white), peeled and chopped
  • 2 cloves garlic, minced
  • 1-2 tomatoes, chopped
  • 1 red bell pepper, chopped
  • 1 tsp ground cumin (optional, or substitute with another spice if preferred)
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp sugar
  • 2 tbsp olive oil or salad oil
  • 1/2 cup white wine (optional, for removing gamey odor from meat)

For the Guacamole:

  • 1-2 ripe avocados
  • 1 lime or lemon, juiced
  • 1 small tomato, diced
  • 1 small onion, finely chopped (optional)
  • 1/2 tsp paprika
  • Salt, to taste

For the Yogurt Sauce:

  • 1 cup plain yogurt
  • 1 tbsp grated paprika
  • 1 tbsp olive oil or salad oil
  • Salt, to taste

For Assembly:

  • Tortillas
  • Shredded lettuce
  • Julienned carrots
  • Shredded cabbage
  • Cooked rice (optional)

Instructions

  1. Prepare the Beef Filling:

    • In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks.
    • While the beef is cooking, peel and chop the onion and garlic. Also, chop the tomatoes and red bell pepper. Place these vegetables in a blender or food processor and blend until smooth.
    • Add the blended vegetable mixture to the cooked beef. Stir to combine and cook for about 15 minutes, allowing the flavors to meld.
    • Season the mixture with cumin, paprika, salt, black pepper, and sugar. If using white wine, add it now and cook until the liquid has mostly evaporated and the mixture is thickened. Continue cooking for about 30 minutes, stirring occasionally.
  2. Make the Guacamole:

    • Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocados with a fork until smooth but still slightly chunky.
    • Add lime or lemon juice, diced tomato, and chopped onion if using. Season with paprika and salt. Mix well and set aside.
  3. Prepare the Yogurt Sauce:

    • In a small bowl, combine the plain yogurt with grated paprika, olive oil, and a pinch of salt. Stir until well mixed. Adjust seasoning to taste.
  4. Assemble the Burritos:

    • Warm the tortillas in a dry skillet or microwave until pliable.
    • Spread a layer of yogurt sauce over each tortilla. Add a generous amount of the beef filling, followed by a dollop of guacamole.
    • Top with shredded lettuce, julienned carrots, shredded cabbage, and a spoonful of cooked rice if desired.
    • Roll up the tortillas tightly, folding in the sides as you go to enclose the filling.
  5. Serve and Enjoy:

    • Cut the burritos in half if desired and serve immediately. Any leftover guacamole or yogurt sauce can be stored in the refrigerator for the next day. To prevent guacamole from turning brown, cover it tightly with plastic wrap to minimize air exposure.

Enjoy this Greek-inspired beef burrito that combines the rich flavors of seasoned beef with the freshness of homemade guacamole and yogurt sauce. Perfect for a quick weeknight dinner or a delicious lunch!

Feel free to adjust the spices and ingredients to suit your taste preferences, and happy cooking!
