Piadina with Yogurt and Granola

Acacia Honey 50g
Fresh Cream (liquid) 150g

Raspberries 12

Raisins 40g
Goji Berries 20g
Multiflower Honey 50g
Water 50g
Sunflower Seed Oil 25g
Muscovado Sugar 1 tablespoon

Instructions:

  1. Prepare the Granola:
    Start by preparing the granola. Begin by rinsing the raisins and goji berries thoroughly. Then, chop the almonds, walnuts, and hazelnuts into rough pieces.

  2. Make the Syrup:
    In a pan, combine the acacia honey, water, and sunflower seed oil. Cook over medium heat for about 10 minutes, stirring occasionally, until the mixture forms a syrup. Once the syrup has thickened, remove it from the heat and stir in the oats, the previously chopped dried fruits (raisins, nuts, and goji berries).

  3. Bake the Granola:
    Spread the granola mixture evenly on a baking sheet lined with parchment paper. Use a spatula to ensure an even distribution. Bake the granola in a preheated static oven at 160ยฐC (320ยฐF) for 30 minutes, placing the tray in the middle of the oven. The granola should turn golden brown and crisp up.

  4. Cool the Granola:
    Once baked, remove the granola from the oven and allow it to cool completely on the baking sheet, which should take about 30 minutes.

  5. Prepare the Yogurt Cream:
    While the granola cools, prepare the yogurt cream. In a bowl, combine the Greek yogurt and acacia honey. In a separate bowl, whip the fresh cream using an electric mixer until stiff peaks form. Gently fold the whipped cream into the yogurt mixture until smooth and creamy.

  6. Prepare the Fruits:
    Wash the strawberries and raspberries thoroughly. Remove the stems and leaves from the strawberries and cut them into halves or quarters as desired.

  7. Cook the Piadinas:
    Heat each piadina (flatbread) in a pan over medium heat for about 1 minute on each side, just enough to warm them through and lightly brown the edges.

  8. Assemble the Piadina:
    Once the piadinas are ready, transfer them to a cutting board. Spread a generous amount of the yogurt cream on one half of each piadina. Top with a portion of granola and fresh berries.

  9. Fold and Serve:
    Fold the piadina in half, cut each one in half, and sprinkle with powdered sugar for an added touch of sweetness.
