Yogurt Plumcake Recipe
Category: Desserts
Serves: 1

Ingredients:

Ingredient Quantity
All-purpose flour 300g
Eggs 300g
Butter 200g
Icing sugar 200g
Greek yogurt 150g
Potato starch 50g
Baking powder 15g
Vanilla bean 1
Salt 4g
Butter (for greasing) to taste
Flour (for dusting) to taste

Instructions:

Step 1: Prepare Your Ingredients
Before starting the yogurt plumcake, ensure that all your ingredients are at room temperature, ideally around 24°C (75°F). This ensures that the batter comes together smoothly and bakes evenly.

Step 2: Mix the Ingredients
In a powerful, large-capacity mixer, combine the seeds of the vanilla bean, cubed butter, all-purpose flour, eggs, Greek yogurt, icing sugar, salt, and baking powder. Blend at maximum speed for about 3.5 minutes, or until the mixture is fully combined and smooth.

Step 3: Prepare the Cake Pans
While the batter is mixing, prepare your cake pans. Lightly grease and flour two slightly tapered pans (approximately 16×8 cm). This step is essential for preventing the cake from sticking and ensuring it comes out smoothly after baking.

Step 4: Final Touches on the Batter
Once your batter is homogenous, take a spatula or a knife, dip it in melted butter, and gently score the center of each loaf. This step helps the batter rise evenly during baking. Repeat this process for both pans.

Step 5: Baking the Plumcakes
Preheat your oven to 185°C (365°F) in static mode. Place the pans in the oven and bake the cakes for 15 minutes at this temperature. Then, reduce the heat to 165°C (325°F) and continue baking for another 30 minutes. The cakes are done when a toothpick inserted into the center comes out clean.

Step 6: Cooling and Decorating
Remove the cakes from the oven and let them cool completely in their pans. Once cooled, carefully remove them from the pans. To decorate, dust the tops with icing sugar, using a piece of cardboard placed in the middle to create a neat line along the center of each cake.

Your delicious Yogurt Plumcake is now ready to serve! Enjoy it fresh with a cup of tea or as a light dessert after a meal.
