Indonesian Chicken in Green Chili Soy Sauce (Ayam Kecap Cabe Ijo)
Ingredients:
- 1 whole chicken, cut into 8 pieces, cleaned
- 15 green chilies, diagonally sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- Salt
- Granulated sugar
- Ground black pepper
- 1/2 tsp chicken broth powder (optional)
- 4 tbsp sweet soy sauce (kecap manis)
- Cooking oil
Spice Paste (Bumbu Ungkep):
- 4 shallots
- 5 cloves garlic
- 2 cm turmeric
- 2 cm ginger
- 2 cm galangal, bruised
- 1 stalk lemongrass, bruised
- 1.5 tsp coriander seeds
- 2 candlenuts
- 4 kaffir lime leaves
- Salt
Instructions:

Prepare the Spice Paste (Bumbu Ungkep):
- Grind shallots, garlic, turmeric, ginger, galangal, lemongrass, coriander seeds, candlenuts, and kaffir lime leaves into a paste. Set aside.

Marinate the Chicken:
- Rub the chicken pieces with the spice paste and let it marinate for about 20 minutes.

Sautéing:
- Heat some cooking oil in a pan. Sauté the minced garlic until fragrant.
- Add the green chilies, sliced onion, and ground black pepper. Stir-fry until fragrant.

Cooking the Chicken:
- Pour in some water, granulated sugar, sweet soy sauce, and chicken broth powder (if using). Bring it to a boil.
- Add the marinated chicken pieces into the pan. Cook until the chicken is fully cooked and the flavors have melded, stirring occasionally.

- Taste and adjust the seasoning with salt if needed. Let the sauce thicken and the flavors absorb into the chicken.
