Instructions

  1. Prepare the peas:
Start by thoroughly rinsing the green peas under cold water. Steam the peas in a steamer until tender and set them aside.

  2. Make the green paste:
In a mixer grinder, combine the fresh coriander (cilantro), green chilies, garlic, ginger, and lemon juice. Add a little water and grind to make a smooth paste. Set the paste aside for later.

  3. Temper the spices:
Heat oil in a kadai (Indian wok) over medium heat. Add a pinch of asafoetida (hing) and cumin seeds. Let them sizzle for a few seconds to release their flavors.

  4. Cook the coriander paste:
Add the freshly ground coriander paste to the tempering and cook for 2 minutes, stirring occasionally, until the mixture is fragrant and the oil begins to separate from the paste.

  5. Combine the peas:
Add the steamed green peas to the pan along with salt and 1 cup of water. Mix well and cook for another 2 to 3 minutes, allowing the flavors to meld together.

  6. Add the paneer:
Gently stir in the paneer cubes. Let them cook in the mixture for another 2 minutes, allowing the paneer to soak up the flavors of the sauce.

  7. Serve:
Once done, turn off the heat. Your Hariyali Matar is ready to serve. It pairs perfectly with dal tadka, lauki raita, and soft phulkas for a hearty meal.
