Lou’s Green Tomato Soup Recipe

Ingredients:

  • 3 medium onions, chopped
  • 1 tablespoon gingerroot, minced
  • 1 clove garlic, minced
  • 2 teaspoons cumin seeds
  • 1 pound green tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1 red chili pepper, chopped
  • 1 potato, peeled and diced
  • 1 tablespoon palm sugar
  • 1 tablespoon light brown sugar
  • 2 cups vegetable broth
  • 1 1/2 cups skim milk
  • Salt, to taste
  • 1/2 cup nonfat yogurt, for garnish
  • 2 tablespoons cashews, chopped, for garnish
  • 1/4 cup fresh cilantro leaves, chopped, for garnish

Instructions:

  1. Heat oil in a large heavy pot over medium heat.

  2. Add onions, garlic, gingerroot, cumin seeds, and cook, stirring, until onions are soft and translucent, about 5 minutes.

  3. Add green tomatoes, green bell pepper, red chili pepper, potato, palm sugar, light brown sugar, and vegetable broth.

  4. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes until vegetables are tender.

  5. Carefully purée the soup in batches using a blender or food processor until smooth.

  6. Return the puréed soup to the pot and stir in skim milk and salt. Heat gently until warmed through.

  7. Serve hot, garnished with a dollop of nonfat yogurt, chopped cashews, and fresh cilantro leaves.
