SUDS ‘N GRUB (Grill-Roasted Root Veggies)

Description: 🌟 A terrific recipe (from the beer store, of course) for those root vegetables that are so readily available in the fall. My personal choice is Molson’s Canadian, but feel free to use your own favorite beer! 🍺

Ingredients:

Ingredients Quantity
Beer 1/2 cup
Barbecue sauce 1/2 cup
Maple syrup 1/2 cup
Water 5 cups
Carrots 1 large
Parsnip 1 large
Potatoes (mini) 1 pound
Red onion 1
Zucchini 1
Mushrooms 4 cups
Garlic cloves 12
BBQ seasoning 2 tablespoons
Olive oil 3 tablespoons
Salt To taste
Pepper To taste

Instructions:

  1. BBQ Syrup:

    • In a small bowl, whisk together the beer, barbecue sauce, and maple syrup until well combined. Set aside for later use.
  2. Preparing the Veggies:

    • Start by bringing 5 cups of water to a rolling boil in a large pot.

    • Meanwhile, prepare the vegetables:

      • Peel and deseed the squash, then cut it into 2-inch chunks.
      • Peel the carrot and parsnip, then cut them into 2-inch chunks.
      • Cut the mini potatoes in half.
    • Add these prepared vegetables to the pot of boiling water and cook for 3 minutes.

    • Drain the vegetables well.

    • Peel the onion and cut it into 12 wedges.

    • Cut the zucchini into 2-inch chunks.

    • Cut the mushrooms in half.

  3. Grilling the Veggies:

    • In a large bowl, combine all the prepared vegetables with the garlic cloves, BBQ seasoning, olive oil, and beer. Toss everything together until well coated.

    • Transfer the seasoned veggies to a BBQ grill basket.

    • Preheat your grill to medium-high heat.

    • Grill the vegetables for 8-12 minutes per side, or until they are lightly charred and tender.

    • Carefully remove the veggies from the grill basket and transfer them to a large bowl.

  4. Finishing Touches:

    • Drizzle the grilled veggies with the prepared BBQ syrup.

    • Season to taste with salt and pepper.

    • Give everything a final toss to combine all the flavors.
