Grilled Chicken and Broccoli Rice (Healthy Menu)

Ingredients:

  • 1 medium to large head of Broccoli, finely chopped (approx. 500g)
  • 500g Chicken Breast, seasoned with salt, black pepper, rosemary, and black soy sauce
  • 1 King Oyster Mushroom, sliced according to preference
  • 50g Potatoes, boiled
  • Minced garlic (for sautéing)
  • Salt, black pepper, sugar or MSG (to taste)
  • Dried Rosemary and Thyme

Instructions:

  1. Use a Food Chopper or Food Processor to finely chop the broccoli until it resembles a coarse oatmeal consistency.
  2. Sauté the chopped broccoli with a little oil and minced garlic. Season with salt, black pepper, and a pinch of sugar. Set aside.
  3. Grill the chicken breast on a hot pan until fully cooked. Set aside.
  4. Grill the boiled potatoes on a hot pan. Season with salt, black pepper, a sprinkle of rosemary, and thyme for flavor. Set aside.
  5. Sauté the sliced king oyster mushroom with a little oil and minced garlic. Season with salt and black pepper. Cook briefly to preserve its texture and nutrients.
  6. Once all components are cooked, arrange them in a meal box as shown in the photo. It can be served immediately or packed as a nutritious lunch for school or work. You can also reheat it briefly in the microwave the next day before packing it.
  7. Note: King oyster mushrooms are my favorite due to their large size and mild aroma compared to other mushrooms. They are more expensive but worth it for their size and pleasant eating experience.

This recipe combines grilled chicken with finely chopped broccoli “rice,” grilled potatoes, and sautéed king oyster mushrooms for a nutritious and satisfying meal. It’s ideal for those looking to enjoy a balanced and healthy lunch or dinner option.
