Ingredients:

  • 1/2 cup olive oil

  • 6 boneless skinless chicken breasts
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 purple onion
  • 2 ripe avocados
  • 8 flour tortillas
  • 2 ripe avocados
  • 1 cup mayonnaise
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 1/2 cup fresh basil, chopped

Instructions:

  1. Prepare Avocado Mayonnaise:

    • Peel the avocados and mash them in a small bowl.
    • Stir in mayonnaise, minced garlic, lemon juice, and chopped basil until well combined.
    • Cover and chill the Avocado Mayonnaise mixture until ready to use.
  2. Marinate Chicken and Vegetables:

    • In a separate bowl, whisk together olive oil, sugar, minced garlic, salt, pepper, and balsamic vinegar.

    • Seal the bags and chill for at least 1 hour, tossing occasionally to ensure even marination.
  3. Grill Chicken and Vegetables:

    • Preheat your grill to medium-high heat (350°F to 400°F / 175°C to 205°C).
    • Remove the chicken and vegetables from the marinades, discarding the marinades.
    • Grill the chicken breasts and vegetables, covered with the grill lid, for about 20 minutes or until the chicken is cooked through, turning once halfway through the cooking time.
    • Once done, remove the vegetables from the grill and set aside to cool slightly.
  4. Assemble Wraps:

    • Allow the grilled chicken and vegetables to cool slightly, then cut them into thin strips.
    • Spread a generous amount of the prepared Avocado Mayonnaise onto each flour tortilla.
    • Place the sliced chicken and vegetables on top of the Avocado Mayonnaise.
