Ayam Bakar Saus Santan Recipe

Ingredients:

  • 1.5 kg chicken wings and drumsticks
  • Juice of 1/2 lime
  • 9 cloves garlic
  • 1 thumb-sized piece of turmeric
  • 1 teaspoon ground coriander
  • Salt to taste
  • Water as needed
  • For the Coconut Sauce:
    • 3 cups small-sized Kara coconut milk
    • Water as needed
    • 2 small pieces palm sugar
    • Salt to taste
    • Pepper to taste
  • Oil for frying
  • Sweet soy sauce (kecap manis)

Instructions:

  1. Prepare the Chicken:

    • Rinse the chicken pieces under running water and set them aside.
    • Rub the chicken with lime juice and let it marinate for at least 15 minutes.
  2. Make the Marinade:

    • Chop the garlic and turmeric into small pieces. Place them in a blender along with a pinch of salt, ground coriander, and a small amount of water.
    • Blend until smooth.
    • Rub this mixture over the chicken pieces and let them marinate for another 15 minutes.
  3. Cook the Chicken:

    • In a pot, bring water to a boil for simmering. Add the marinated chicken pieces to the boiling water.
    • Stir occasionally and cover the pot. Cook until the water is slightly reduced, but do not let it dry out completely, as you’ll need some of the water for later.
    • Set the chicken aside.
  4. Prepare the Soy Sauce:

    • Pour sweet soy sauce into the pot used for simmering the chicken.
    • Stir well and let it sit for another 15 minutes.
  5. Prepare the Coconut Sauce:

    • In a small pot, combine the Kara coconut milk with some water. Bring to a boil.
    • Add palm sugar, salt, and pepper. Stir until the sugar dissolves. Adjust the seasoning to taste.
  6. Fry the Chicken:

    • Heat oil in a pan. Fry the chicken pieces briefly for about 5 minutes.
    • Remove the chicken from the oil and place it back into the sweet soy sauce mixture.
  7. Grill the Chicken:

    • Prepare your grill (preferably a charcoal grill for that authentic flavor).
    • Grill the chicken until the skin is caramelized and slightly crispy.
  8. Serve:

    • Serve the grilled chicken with a generous drizzle of the coconut sauce.
