Chicken Souvlaki with Tzatziki

This delicious Greek-inspired dish features tender pieces of chicken marinated in Mediterranean flavors, then skewered and grilled to perfection. Ingredients:

For the Chicken Marinade:

  • 500 grams Chicken breasts (cut into pieces)
  • 2 tablespoons Extra Virgin Olive Oil
  • 4 tablespoons Lemon juice
  • 4 cloves Garlic (minced)
  • 2 tablespoons Dried oregano
  • 1 teaspoon Salt (or as needed)
  • 1 teaspoon Black pepper powder

For the Tzatziki Dip:

  • 2 Cucumbers (grated and squeezed)
  • 1-1/2 cups Hung Curd (Greek Yogurt)
  • 2 teaspoons White Wine vinegar (or apple cider vinegar)
  • 1 tablespoon Lemon juice
  • 2 cloves Garlic (minced)
  • 1 tablespoon Extra Virgin Olive Oil
  • 1/2 teaspoon Salt (or as needed)
  • 1/2 teaspoon Black pepper powder

Preparation Time: 180 minutes (Marination time)
Cook Time: 15 minutes


Instructions:

  1. Prepare the Chicken Marinade:
    In a bowl, combine the chicken pieces with extra virgin olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper powder. Mix well and let the chicken marinate for at least 3 hours, preferably overnight.

  2. Grill the Chicken:
    Once the chicken has marinated, thread the pieces onto 2-3 skewers. Heat a little oil in a large skillet over high heat, and cook the skewers for 3 minutes on each side, or until the chicken is fully cooked. Alternatively, you can grill the chicken on a BBQ.

  3. Prepare the Tzatziki Dip:
    For the tzatziki, peel the cucumbers and cut off the ends. Grate the cucumbers coarsely, then squeeze the grated cucumber to remove excess water. In a bowl, combine the squeezed cucumber with Greek yogurt, white wine vinegar (or apple cider vinegar), lemon juice, minced garlic, olive oil, salt, and black pepper powder. Mix well, then let it sit for 15-20 minutes to allow the flavors to meld.

  4. Serve:
    Serve the grilled chicken souvlaki with warm flatbreads, fresh lettuce or cabbage, and a side salad. Top the chicken with the prepared tzatziki dip. For a complete meal, pair with Mujaddara for a delicious and hearty weekend dinner.
