Instructions

  1. Prepare the Chicken Marinade:
    Start by preparing the chicken. Slice the chicken breast into 2 cm cubes, removing any bones or cartilage. Place the chicken cubes into a large dish and add the marinade ingredients: olive oil, salt, black pepper, smoked paprika, oregano, and the crushed garlic clove. Grate the zest of the lemon over the chicken and mix everything well to ensure the chicken is evenly coated. Cover the dish with plastic wrap and set aside to marinate for at least 30 minutes.

  2. Prepare the Roasted Vegetables:
    While the chicken marinates, prepare the roasted vegetables. Thinly slice the red onion and potatoes using a mandoline slicer (leave the skin on the potatoes for added texture).
