Cheese (grated) 1/2 cup
Butter 4 tablespoons
Button mushrooms (cut into quarters) 400 grams
Sweet corn (steamed) 1/2 cup
Spring onion (bulb & greens, chopped) 1/4 cup
Garlic (finely chopped) 6 cloves
Ginger (finely chopped) 2 inches
Green chillies (finely chopped) 2
Corn flour 1 tablespoon
Soy sauce 1/2 tablespoon
Tomato ketchup 1 tablespoon
Sweet and spicy red chilli sauce (tomato chilli sauce) 1 teaspoon
Sunflower oil 1 tablespoon
Salt To taste

Instructions

Making the Chilli Mushroom & Corn Filling:

  1. Prepare the Base Sauce: Start by creating the base sauce for the filling. In a mixing bowl, combine 1 tablespoon of corn flour with 1/4 cup of water. Stir well to form a smooth paste. Add the soy sauce, tomato ketchup, red chilli sauce, and salt to this mixture, mixing it thoroughly until well combined. Set aside.

  2. Cook the Vegetables: Heat 1 tablespoon of sunflower oil in a wok over high heat. Once the oil is hot, add the finely chopped garlic, ginger, green chillies, and spring onions. Stir-fry for about 30 seconds until fragrant.

  3. Add Mushrooms and Sweet Corn: Add the quartered button mushrooms to the wok and sautรฉ them over medium heat until they become tender and cooked through. Once the mushrooms are cooked, add the steamed sweet corn kernels to the wok and mix them in.

  4. Thicken the Sauce: Stir in the corn flour mixture prepared earlier. Continue cooking for a few minutes, stirring constantly, until the sauce thickens and coats the mushrooms and corn evenly. Turn the heat to high and cook for another couple of minutes to combine all the flavors.

  5. Garnish and Set Aside: Once the mixture is thick and well-combined, turn off the heat. Garnish the filling with chopped spring onion leaves. Transfer the Chilli Mushroom & Corn filling to a bowl and set aside to cool.

  3. Assemble the Quesadillas: Place each tortilla on a flat surface such as a countertop or chopping board. Spoon a generous amount of the Chilli Mushroom & Corn filling onto one half of each tortilla. Sprinkle grated cheese over the filling. Fold the tortilla over to create a semi-circular shape, encasing the filling.

  4. Grill the Quesadillas: Heat a grill pan over high heat. Smear some softened butter on the top of the quesadillas. Place the folded quesadillas on the grill pan, cooking each side until browned, crispy, and grill marks appear. Apply butter to the top side of the quesadilla as well before flipping it.
