Prepare the Pico de Gallo: Start by washing the Piccadilly tomatoes thoroughly and dicing them into small cubes. Place the diced tomatoes in a colander to drain excess water.

Chop the Vegetables: Slice the friggitelli peppers into strips and remove the seeds. Peel and finely chop the white onions. Then, squeeze the juice from the lime and chop the fresh parsley finely.

Mix Pico de Gallo Ingredients: In a large bowl, combine the tomatoes, chopped friggitelli, onions, chili pepper (finely chopped), lime juice, and fresh parsley. Season with salt and add a drizzle of extra virgin olive oil. Stir well to combine all the ingredients.

Prepare the Eggplant: Wash the eggplants, trim the ends, and slice them into 1/2 cm thick rounds.

Grill the Eggplant: Heat a grill pan and brush it lightly with olive oil. Once the pan is hot, grill the eggplant slices for a few minutes on each side until they are tender and have beautiful grill marks.

Prepare the Scamorza: Slice the scamorza cheese into 1/2 cm thick slices.

Warm the Piadine: In a dry pan, heat the piadine (flatbreads) for about 30 seconds on each side until slightly crispy and warm.

Assemble the Piadina: Once the piadina is warm, place it on a cutting board. Layer the grilled eggplant slices on one side of the piadina, then top with slices of scamorza cheese.

Add Pico de Gallo: Spoon a generous amount of pico de gallo over the cheese and eggplant layer.

Fold and Serve: Carefully fold the piadina in half, enclosing the filling. Slice it in half and serve warm.
