Fish Skewers (Spiedini di Pesce)

Swordfish 3 pieces
Salmon 300g
Small Squid (Seppioline) 200g
Shrimp (large) 8 pieces
Bell Peppers (red and yellow) 1 of each
Zucchini 2 medium
Extra Virgin Olive Oil 3 tbsp
White Wine ½ cup
Salt to taste
Black Pepper to taste
Bay Leaf 1 leaf
Thyme 5 sprigs
Dill 1 sprig
Rosemary 1 sprig
Sage A few leaves

Instructions

  1. Prepare the Fish and Vegetables
    Start by preparing the swordfish: cut it into 3 cm cubes (if the swordfish is not thick enough, cut it along the width and fold it in half). Do the same with the salmon. Wash and cut the bell peppers into 3 cm squares. For the zucchini, wash, trim the ends, and slice them into rounds about ½ cm thick.

  2. Assemble the Skewers
    Take wooden skewers and begin threading the ingredients in the following order: a slice of zucchini, a piece of swordfish, a square of red bell pepper, a piece of salmon, another slice of zucchini, a shrimp, a square of yellow bell pepper, a squid, another square of red bell pepper, a piece of swordfish, and a final slice of zucchini. Continue this process until you have assembled 8 skewers with the available ingredients.

  3. Cook the Skewers
    Heat a large skillet over medium heat and add the olive oil. Once hot, add the finely chopped herbs (bay leaf, thyme, dill, rosemary, and sage) and let them infuse the oil for about a minute. Carefully place the prepared skewers in the skillet and cook them for 5 minutes on each side until golden and crispy.

  4. Add White Wine and Seasoning
    Once the skewers are well-seared, deglaze the pan with the white wine, then season with salt and black pepper to taste. Cover the skillet with a lid and let the skewers simmer over low heat for 10-15 minutes. This will allow the flavors to meld and ensure the fish remains tender. Avoid cooking the skewers for more than 20 minutes, as they will become dry and tough.

  5. Serve
    Serve the fish skewers immediately, perhaps alongside a fresh mixed salad, julienned carrots, roasted potatoes, or any side dish of your choice.
