For the Hummus:

Sesame Seeds (Til seeds) 2 tablespoons (roasted) or 1 tablespoon tahini
Garlic 4 cloves
Lemon (juice extracted) 1
Cumin Powder (Jeera) 1/2 teaspoon
Extra Virgin Olive Oil 1/4 cup

For the Paneer Bhurji:

Onion 1, finely chopped
Green Bell Pepper (Capsicum) 1, finely chopped
Carrot (Gajjar) 1, grated
Paneer (Homemade Cottage Cheese) 1/2 cup, grated
Britannia Cheese Block 1/4 cup, grated
Cumin Powder (Jeera) 1/4 teaspoon
Red Chilli Powder 1/4 teaspoon
Salt To taste
Extra Virgin Olive Oil 2 teaspoons

For the Sandwich:

Whole Wheat Brown Bread 12 slices (for sandwich)

Instructions:

  1. Prepare the Hummus:

    • Begin by cooking the soaked chickpeas in a pressure cooker for about 30 minutes until they are soft. Allow the pressure to release naturally, and drain out any excess water.
    • In a blender or food processor, add the cooked chickpeas, roasted sesame seeds (or tahini), lemon juice, garlic, olive oil, and cumin powder.
    • Blend the mixture by adding a small amount of water at a time, until a thick and creamy consistency is achieved. Transfer the hummus to a bowl and set it aside for later use.
  2. Make the Paneer Bhurji:

    • In a preheated pan, add the extra virgin olive oil. Once the oil heats up, sauté the garlic and onions until the onions become soft and translucent.
    • Add the finely chopped green bell pepper (capsicum) and grated carrots. Sauté the vegetables until the capsicum releases its moisture and softens.
    • Stir in the cumin powder, red chili powder, and salt to taste. Then add the grated paneer and Britannia cheese. Mix well to combine and cook for another 2–3 minutes.
    • Turn off the heat and let the paneer bhurji mixture cool slightly.
  3. Assemble the Sandwich:

    • Preheat a grill pan and lightly butter both sides of the bread slices.
    • Spread a generous layer of the homemade hummus on one side of each bread slice.
    • Evenly spread the cooled paneer bhurji mixture over the hummus on one slice of bread.
    • Grate some cheese on top of the paneer bhurji mixture to add extra flavor.
    • Top with the second slice of bread, hummus side down, to complete the sandwich.
  4. Grill the Sandwich:

    • Place the prepared sandwich on the preheated grill pan. Grill on medium heat, pressing gently to ensure even cooking, until the bread turns golden brown and crispy.
    • Flip the sandwich carefully to grill the other side until both sides are crispy and golden.
  5. Serve and Enjoy:

    • Remove the sandwich from the pan and cut it into halves or quarters. Serve hot with a refreshing beverage, such as Plum Ginger Juice, for a wholesome and nutritious breakfast.
