Indonesian Sate Ayam Ponorogo Recipe
Ingredients:
- 400 grams chicken fillet
- 1 1/2 pieces of palm sugar (gula merah)
- 4 cloves garlic
- 4 shallots
- 1 tablespoon cumin seeds (jintan)
- 1/2 teaspoon ground black pepper
- 1 piece galangal (lengkuas)
- 1 tablespoon coriander seeds (ketumbar)
- 4 candlenuts (kemiri)
- 1/4 teaspoon toasted shrimp paste (terasi bakar)
- 4 tablespoons peanut butter
- Salt to taste
- 7 tablespoons warm water

Prepare the Chicken:
- Cut the chicken fillet into cubes according to your preference. Set aside.

Prepare the Spice Paste:
- Grind together garlic, shallots, candlenuts (kemiri), toasted coriander seeds (ketumbar), toasted cumin seeds (jintan), 1/2 teaspoon salt, and palm sugar until smooth. This forms the spice paste.

Marinate and Cook the Chicken:
- Massage the spice paste onto the chicken fillet cubes, ensuring they are well coated. Let it marinate for a while.
- Heat a non-stick pan or Teflon pan. Cook the marinated chicken over medium heat until the spices are dry and the chicken is slightly grilled.

Prepare Peanut Sauce:
- In a bowl, mix peanut butter with warm water and toasted shrimp paste (terasi bakar). Add 1 teaspoon of salt and stir until well combined.

- Arrange the grilled chicken on a serving plate. Serve with the peanut sauce on the side.
