Grilled Indonesian Chicken with Spicy Coconut Marinade

Ayam Bakar Bumbu Rujak Bamboe

Ingredients:

  • 500 grams chicken
  • 1 packet Bamboe seasoning mix
  • 100 grams Kara coconut milk
  • 4 bay leaves
  • 2 kaffir lime leaves
  • Ground coriander, to taste
  • Water, as needed for boiling
  • Sugar, to taste
  • 1 tablespoon salt, or to taste
  • Cooking oil, for sautéing

Instructions:

  1. Sauté the Seasoning:

    • In a large pan, heat some cooking oil over medium heat.
    • Add the Bamboe seasoning mix and sauté until fragrant, approximately 2-3 minutes.
  2. Cook the Chicken:

    • Add the chicken pieces to the pan and cook for about 5 minutes, stirring occasionally to coat the chicken with the seasoning.
  3. Add Coconut Milk and Spices:

    • Pour in the Kara coconut milk, then add the bay leaves, kaffir lime leaves, salt, sugar, and ground coriander.
    • Stir well to combine all the ingredients.
  4. Simmer the Chicken:

    • Add enough water to the pan to fully submerge the chicken.
    • Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the chicken is tender and the flavors have melded together.
  5. Reduce the Sauce:

    • Continue to simmer until the sauce thickens and coats the chicken. This step helps the flavors to penetrate the meat more deeply.
    • Once the sauce has reduced and the chicken is well-coated, remove the chicken from the pan.
  6. Grill the Chicken:

    • Preheat a grill to medium-high heat.
    • Grill the chicken pieces until they develop a slightly charred and smoky appearance, turning occasionally to ensure even cooking. This should take about 5-7 minutes.
  7. Serve:

    • Transfer the grilled chicken to a serving plate.
    • Serve your Ayam Bakar Bumbu Rujak Bamboe with steamed rice and your favorite side dishes.
