Garlic Paste 1 tbsp

Instructions

  1. Marinate the Paneer and Vegetables
    Start by preparing the marinade for the Paneer Shashlik. In a large glass mixing bowl, combine the following marinade ingredients:

    • Fresh cream
    • Curd (Dahi)
    • Sunflower oil
    • Black pepper powder
    • Salt
    • Cumin powder (Jeera)
    • Garam masala powder
    • Chaat masala powder
    • Anardana powder
    • Garlic paste
    • Ginger paste
    • Lemon juice

    Mix everything thoroughly to ensure the marinade is well-blended. Add the cubed paneer, chopped green bell pepper, yellow bell pepper (optional), onions, tomatoes, and finely chopped coriander leaves to the marinade. Toss everything gently, ensuring the vegetables and paneer are well-coated with the marinade.

  2. Refrigerate for Flavor Infusion
    Once everything is well coated, cover the bowl with cling wrap and refrigerate for at least 2 hours to allow the flavors to meld and the paneer to absorb the marinade.

  3. Preheat the Oven and Prepare the Skewers
    Preheat your oven to 250°C (482°F) and let it heat for 10 minutes. While the oven preheats, soak the bamboo skewers in a bowl of water to prevent them from burning during grilling.

  4. Assemble the Skewers
    After marinating, take each soaked bamboo skewer and thread the marinated vegetables and paneer alternately onto the skewer. Continue until all the ingredients are used up.

  5. Grill the Skewers
    Place the skewers onto a wire grill tray. Slide the tray onto the top rack position of the preheated oven. Place a drip tray at the bottom of the oven to collect any juices that might fall during grilling.

    Set the oven to broil/roast/grill mode and grill the skewers for 6-7 minutes at 250°C (482°F). Halfway through, baste the skewers with a little sunflower oil and lemon juice to keep them moist and flavorful. Turn the skewers every 2 minutes, using mittens for safety, to ensure they are evenly cooked on all sides.

  6. Final Touches
    Once the skewers are evenly cooked and have a beautiful char, carefully remove the tray from the oven. Gently take the skewers out and transfer them to a serving plate.

  7. Serve
