Instructions

Step 1: Prepare the Marinade

  1. In a large glass mixing bowl, combine all the ingredients listed under “For the Marinade.” Ensure that they are mixed thoroughly to form a smooth, flavorful base.
  2. Add the cubed paneer, bell peppers, onions, tomatoes, and coriander leaves to the marinade. Gently toss everything together, ensuring the paneer and vegetables are well-coated.
  3. Cover the bowl with cling wrap and refrigerate for at least 2 hours to allow the flavors to infuse.

Step 2: Preheat and Prepare

  1. Preheat your oven to 250°C (482°F) for 10 minutes.
  2. Meanwhile, soak bamboo skewers in a bowl of water to prevent them from burning during grilling.

Step 3: Assemble the Skewers

  1. Remove the marinated paneer and vegetables from the refrigerator.
  2. Take one bamboo skewer at a time and alternately pierce the marinated paneer, bell peppers, onions, and tomatoes onto it. Repeat until all the ingredients are used.

Step 4: Grill the Skewers

  1. Place the prepared skewers onto a wire grill tray. Position the tray on the top rack of the oven.
  2. Place a drip tray or crumb tray at the bottom of the oven to collect any juices that may drip off.
  3. Set the oven to broil/roast/grill mode and grill the skewers at 250°C for 6–7 minutes.
  4. After the first 7 minutes, baste the skewers with a little oil and lemon juice using a brush.
  5. Continue grilling, turning the skewers every 2 minutes to ensure even cooking. Grill for an additional 5–7 minutes until the paneer and vegetables are golden and slightly charred.

Step 5: Serve and Garnish

  1. Once cooked, carefully remove the tray from the oven using mittens. Allow the skewers to cool slightly.
  2. Gently slide the paneer and vegetables off the skewers onto a serving platter.
  3. Garnish with onion rings and finely sliced cabbage for a refreshing crunch.
