Begin by preparing the red bell peppers. Wash them thoroughly and dry them. Arrange the peppers on a baking tray lined with parchment paper. Roast the peppers in a preheated fan oven at 220°C (428°F) for approximately 50 minutes, turning them halfway through the cooking process. Once roasted, allow them to cool slightly. The skin will peel off easily, and you can remove the seeds and inner filaments. Cut the peppers into strips, place them in a bowl, and season with garlic (minced or finely chopped), fresh mint, sea salt, black pepper, and a drizzle of olive oil.
