Ingredients:

For the Sandwich:

  • 2 Hot Dog Breads
  • 2 Cheese Slices
  • 2 tbsp Classic Mayonnaise (with egg)
  • 2 tbsp Sweet and Spicy Red Chili Sauce (Tomato Chili Sauce)
  • 1 Tomato, thinly sliced

For the Grilled Basil Pesto Chicken:

  • 1 Chicken Breast
  • 1 tbsp Fresh Cream
  • 1 tsp Lemon Juice
  • 2 tbsp Garlic Butter

For Fresh Basil Pesto:

  • 125g Basil Leaves (with stems removed)
  • 2 tbsp Walnuts (toasted)
  • 4 cloves Garlic (finely chopped)
  • Salt to taste
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 tbsp Whole Black Peppercorns (coarsely pounded)
  • 1/4 cup Parmesan Cheese (grated, optional)

Preparation Time: 90 minutes

Cooking Time: 30 minutes

Instructions:

  1. Make the Fresh Basil Pesto:

    • In a food processor, combine basil leaves, walnuts, garlic, salt, crushed black peppercorns, and Parmesan cheese (if using). Blend until the mixture forms a coarse paste.
    • With the processor running, slowly pour in the olive oil and continue processing until the pesto is thoroughly pureed. Transfer to a bowl and set aside.
  2. Marinate the Chicken:

    • In a mixing bowl, combine the chicken breast with 2 tablespoons of basil pesto, fresh cream, and lemon juice. Let it marinate for about 1 hour.
  3. Grill the Chicken:

    • Heat a grill pan or skillet over medium heat. Add garlic butter and place the marinated chicken breast onto the pan. Grill for about 8-10 minutes on each side, or until fully cooked. Remove from heat and slice the chicken into small chunks.
  4. Prepare the Sub Bread:

    • Slice the hot dog bread horizontally. Lightly butter each half and toast them on a griddle over low heat until golden brown. Turn off the heat.
  5. Assemble the Sandwich:

    • Spread red chili sauce on the bottom half of the toasted bread. Arrange tomato slices, followed by the grilled pesto chicken pieces. Place the cheese slices over the chicken.
    • Spread mayonnaise on the top half of the bread and close the sandwich.
  6. Serve:
