Marinda tomatoes 500g
Pecorino di Fossa (aged pecorino) 120g
Herb-infused cooked ham (prosciutto cotto alle erbe) 400g
Mixed salad greens (insalata misticanza) To taste
Coarse sea salt 20g
Fresh thyme 3 sprigs
Fresh rosemary 3 sprigs
Mixed peppercorns To taste
Extra virgin olive oil To taste

Instructions:

  1. Prepare the Aromatic Salt:
    Start by preparing the aromatic salt. In a blender, combine the coarse sea salt with a handful of mixed peppercorns. Blend until you achieve a uniform, finely ground mixture. This will serve as the seasoning for your piadina.

  2. Prepare the Pecorino:
    Slice the Pecorino di Fossa into thin slices, about 1 cm thick. These will be added to the piadina for a slightly melted, deliciously cheesy filling.

  3. Roast the Tomatoes:
    Heat a non-stick skillet over medium heat. Slice the Marinda tomatoes into rounds and lightly roast them in the pan, turning to brown both sides. Once done, transfer the roasted tomatoes into a bowl and drizzle with extra virgin olive oil, then set aside.

  4. Grill the Piadinas:
    In the same skillet, heat the piadinas for about 1 minute on each side over medium heat. When ready, sprinkle the aromatic salt evenly on the piadinas to add extra flavor. On one half of each flatbread, place the slices of Pecorino so it slightly melts from the heat.

  5. Assemble the Piadina:
    Once the cheese has softened, layer the mixed salad greens on top of the pecorino. Next, add the slices of herb-infused cooked ham (prosciutto cotto alle erbe) and top with the roasted tomatoes.

  6. Final Touches:
    Carefully fold the piadina in half to encase the fillings, creating a delicious sandwich. Serve immediately while hot, allowing the flavors to meld beautifully.
