Instructions:

  1. Prep the Ingredients:
    Start by prepping all the ingredients. Peel and slice the pineapple, finely chop the onion, bell peppers, pickled jalapenos, and cilantro leaves. Tear the mint leaves roughly to release their flavor.

  2. Grill the Pineapple:
    Heat 1 tablespoon of Extra Virgin Olive Oil in a grill pan over medium heat. Once the oil is hot, place the pineapple slices on the pan. Sprinkle a little salt on top and cover.
