Prepare the Marinade:
Begin by preparing the marinade for the pork ribs. In a wide, shallow bowl, pour the red wine. Add the shallots, which should be cleaned and roughly chopped. -
Prepare the Ribs:
Cut the pork ribs into manageable pieces. Add them to the marinade. Pour in the extra virgin olive oil, and season with salt and black pepper to taste. Mix the ingredients gently to ensure that the ribs are well-coated. Allow the ribs to marinate for at least two hours in the refrigerator. This process will help to tenderize the meat while infusing it with flavor. -
Prepare the Sauce:
