---|---|
Radicchio | 800g |
Smoked Pancetta | 200g |
Pink Peppercorns | To taste |
Sweet Paprika | 1 tablespoon |
Extra Virgin Olive Oil | 8 tablespoons |
Fine Salt | To taste |
Instructions:
-
Prepare the Radicchio:
Begin by washing each head of radicchio (you will need about 4 heads). After washing, pat the radicchio dry with a clean kitchen towel. Using a sharp knife, cut each head in half lengthwise. Massage each piece with a tablespoon of extra virgin olive oil, ensuring it is evenly coated. -
Grill the Radicchio:
Place a grill pan (or a barbecue) on medium-high heat. Allow it to preheat until it’s piping hot. Lay the radicchio halves on the pan, ensuring they are not crowded. Grill them for at least 10 minutes, turning them frequently to ensure an even char on all sides. The radicchio should become tender with a slight smoky flavor. -
Prepare the Pancetta:
While the radicchio is grilling, cut the smoked pancetta into small pieces. Using a food processor or knife, finely chop the pancetta. Heat a non-stick pan over medium heat and add the pancetta. Sauté it for about two minutes until it becomes crispy and releases its flavorful fat. -
Add the Pink Peppercorns:
Once the pancetta is nicely browned, sprinkle in the pink peppercorns and stir them in, allowing the flavors to meld for another minute. -
Assemble the Dish:
Once the radicchio is done grilling, transfer it to a serving platter. Top it with the crispy pancetta and pink peppercorn mixture. Add a pinch of sweet paprika, a sprinkle of fine salt, and drizzle with a little more extra virgin olive oil to finish. -
Serve:
This dish can be enjoyed either hot or at room temperature. Serve immediately, savoring the smoky, crispy, and slightly spicy flavors of this simple yet satisfying side dish.
Tips:
- Radicchio Varieties: If you can’t find the traditional red radicchio, feel free to use any other variety such as treviso or even endive for a slightly milder flavor.
- Smoked Pancetta Alternative: If smoked pancetta isn’t available, try substituting with crispy bacon or pancetta.
- Serving Suggestion: This dish pairs wonderfully with grilled meats or as part of a larger antipasti spread. Enjoy it with a light white wine for a perfect balance of flavors.
