Instructions

  1. Prepare the Marinade
In a large mixing bowl, combine the orange zest, orange juice, olive oil, salt, red pepper flakes, and minced garlic. Whisk everything together until the ingredients are well blended. This zesty mixture will act as both a marinade for the shrimp and veggies and a dressing for the final salad.

  2. Set Aside Dressing
Measure out 1/3 cup of the orange marinade, cover it, and refrigerate. This will be used as a dressing to drizzle over the finished dish for added flavor.

  3. Marinate the Shrimp and Vegetables
Pour the remaining marinade over the shrimp, jicama, red and green bell peppers, and pineapple chunks. Toss everything gently to ensure even coating. Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld and the shrimp to absorb the zest and spice.

  4. Prepare the Skewers
Once the marinating time is complete, remove the shrimp and vegetables from the refrigerator. Thread the marinated shrimp, bell peppers, jicama, and pineapple chunks alternately onto eight 10-inch skewers. Arrange them evenly to ensure balanced cooking.

  5. Grill the Skewers
Heat your grill to medium-high. Place the skewers over the heat and grill them, turning occasionally, for about 10-15 minutes or until the shrimp turn pink and opaque. Take care not to overcook the shrimp as they can become tough.

  6. Serve on a Bed of Greens
Arrange the fresh salad greens on a large serving platter. Place the grilled shrimp kabobs on top of the greens and drizzle with the reserved orange marinade dressing. Serve immediately, paired with warm bread for a complete meal.

Notes:

  • Tips for Serving: This dish is especially delightful served with crusty bread or light, refreshing sides like a cucumber salad or watermelon slices.
  • Alternative Cooking Method: If a grill is unavailable, these skewers can also be cooked on a stovetop grill pan.

Enjoy this flavorful, healthy summer dish that’s as visually appealing as it is delicious!
