Marinate the Swordfish
Start by preparing the swordfish marinade. In a medium-sized baking dish, place the swordfish fillets. Add 30g of extra virgin olive oil, fresh oregano leaves, and the zest of one lemon (reserve a little zest for the garnish later). Squeeze the juice of half the lemon over the fish and ensure that the fillets are evenly coated. Turn the fillets so both sides are covered in the marinade. Cover the dish with plastic wrap and set it aside while you prepare the sauce. -
Make the Tomato Sauce
Heat 15g of extra virgin olive oil in a pan over medium heat. Add the whole garlic clove and allow it to sizzle until fragrant. Season with salt and pepper. Once the garlic starts to soften, pour in the Worcestershire sauce and let it reduce slightly. Add the cherry tomatoes (preferably datterini) and cook for about 10 minutes, stirring occasionally. The tomatoes should burst and release their juices, creating a simple, aromatic sauce. Once the tomatoes have cooked down, remove the garlic and turn off the heat. Set the sauce aside. -
Cook the Swordfish
Heat a separate pan (or the same one you used for the tomato sauce) over medium-high heat. Remove the swordfish fillets from the marinade, discarding any excess liquid. Place the swordfish in the hot pan and cook for 2 minutes on each side until golden brown and lightly crispy. Once done, transfer the swordfish to a plate and let it rest for a moment before cutting it into cubes. -
Assemble the Dish
To plate, spoon a little of the tomato sauce onto the bottom of each plate. Arrange the swordfish cubes on top of the sauce.
