Grilled Taichan Chicken Skewers with Spicy Sambal

Ingredients:

For the Chicken Skewers:

  • 1 kg chicken breast fillet
  • 1 lime
  • 5 cloves garlic
  • 3/4 tsp salt
  • 1/2 tsp chicken seasoning (optional)
  • 3/4 tsp ground black pepper

For the Sambal:

  • 25 birdโ€™s eye chilies (adjust to taste)
  • 5 shallots
  • 1/2 lime
  • 1/2 tsp salt
  • 1/2 tsp granulated sugar
  • 1/4 tsp chicken seasoning (optional)

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken breast fillet and cut it into bite-sized cubes. Place the pieces into a mixing bowl.
    • Squeeze the lime over the chicken to add a tangy flavor and help tenderize the meat. Set aside.
  2. Season the Chicken:

    • Crush the garlic cloves to release their flavor.
    • Add the garlic, salt, chicken seasoning (if using), and ground black pepper to the bowl with the chicken. Mix well to ensure the chicken is evenly coated with the seasoning.
    • For the best results, let the chicken marinate for about 30 minutes to allow the flavors to infuse. However, if you’re short on time, you can proceed immediately.
  3. Prepare the Skewers:

    • Thread the marinated chicken pieces onto skewers. Ensure that the pieces are evenly spaced to cook uniformly.
    • Preheat your grill or barbecue to a medium-high heat.
  4. Grill the Chicken:

    • Place the skewers on the grill and cook, turning occasionally to ensure even grilling. The chicken should be cooked through and have a nice, slightly charred exterior. Be attentive, as chicken skewers cook quickly and can burn if left unattended.
  5. Make the Sambal:

  6. Serve:

    • Once the chicken skewers are cooked, remove them from the grill and place them on a serving plate.
