Grilled Taichan Chicken Skewers with Spicy Sambal
Ingredients:
For the Chicken Skewers:
- 1 kg chicken breast fillet
- 1 lime
- 5 cloves garlic
- 3/4 tsp salt
- 1/2 tsp chicken seasoning (optional)
- 3/4 tsp ground black pepper
For the Sambal:
- 25 birdโs eye chilies (adjust to taste)
- 5 shallots
- 1/2 lime
- 1/2 tsp salt
- 1/2 tsp granulated sugar
- 1/4 tsp chicken seasoning (optional)

Prepare the Chicken:
- Clean the chicken breast fillet and cut it into bite-sized cubes. Place the pieces into a mixing bowl.
- Squeeze the lime over the chicken to add a tangy flavor and help tenderize the meat. Set aside.

Season the Chicken:
- Crush the garlic cloves to release their flavor.
- Add the garlic, salt, chicken seasoning (if using), and ground black pepper to the bowl with the chicken. Mix well to ensure the chicken is evenly coated with the seasoning.
- For the best results, let the chicken marinate for about 30 minutes to allow the flavors to infuse. However, if you’re short on time, you can proceed immediately.

- Thread the marinated chicken pieces onto skewers. Ensure that the pieces are evenly spaced to cook uniformly.
