- Grill each side until golden brown and slightly crispy, approximately 3-4 minutes per side. Once cooked, transfer to a serving plate and set aside.

Preparing the Spicy Garlic Sambal: - In the same pan, add the garlic and shallot, grilling until softened and aromatic. Remove any charred bits to enhance the sambal’s flavor.
- Next, add the bird’s eye chili to the pan, toasting until fragrant, about 2 minutes.
- Using a mortar and pestle (or a small food processor), grind together the garlic, shallot, and toasted chili until a smooth paste forms. Adjust the consistency to your preference.
