Instructions

  1. Prepare the Fresh Herb Blend:
    Begin by finely chopping fresh rosemary, oregano, and thyme. This aromatic mixture will add a fresh, earthy flavor to the turkey patty.

  2. Mix the Turkey Patty:
    In a large bowl, combine the ground turkey with the mustard and your finely chopped herbs. Season the mixture with a pinch of sea salt and black pepper. Gently mix everything together with your hands until well incorporated, but be careful not to overwork the meat to ensure a juicy patty.

  3. Cook the Eggplants:
    Slice the eggplants into rounds about half a centimeter thick. Heat a skillet over medium heat, drizzle with a little olive oil, and cook the eggplant slices on both sides until they’re golden brown and soft. Make sure to turn them carefully so they cook evenly on both sides.

    In the last minute of cooking, place slices of Pecorino Sardo cheese on top of each patty. Cover the pan with a lid to melt the cheese perfectly over the turkey.
