Recipe Instructions:

Step Instruction
1 Quarter the sweet peppers lengthwise. Remove and discard the stems, seeds, and membranes.
2 Brush eggplant slices with olive oil. Grill eggplant slices and sweet pepper quarters on the rack of an uncovered grill directly over medium-hot coals for 4 minutes, or broil until tender.
3 Turn and grill for 3 to 5 minutes more or until the eggplant slices are tender and the sweet peppers are slightly charred.
4 Remove veggies from the grill and set aside.
5 Spread one side of each French bread slice with goat cheese and dijon-style mustard.
6 Layer three eggplant slices and two sweet pepper quarters on each of four bread slices.
7 Top with the remaining bread slices to form sandwiches.
8 Serve warm and enjoy!
