  1. Prepare the walnuts: Begin by finely chopping the walnut kernels. Set them aside to sprinkle over the finished dish for added crunch.

  2. Grill the zucchini: Preheat your grill pan over medium heat. Slice the zucchini into thin strips and place them on the hot grill. Let them cook for a few minutes, then turn them over and continue grilling for another minute or two until they have nice grill marks and are tender but still firm.

  3. Warm the piadine: Lay the flatbreads (piadine) on the grill pan for about 30 seconds per side to warm them up. This will also give them a slight crispiness, making them perfect for filling.

  4. Add the stracchino cheese: On one side of each piadina, spread half of the stracchino cheese. Cover the piadina with a lid to help the cheese melt.

  5. Assemble the flatbread: Once the cheese has softened, remove the piadina from the grill. Place half of the grilled zucchini on top of the melted cheese. Drizzle a bit of balsamic glaze for that tangy sweetness, and sprinkle the chopped walnuts over the top.

  6. Fold and serve: Fold the piadina in half to close it and press lightly to hold the contents together. Repeat the process for the second piadina.
