Instructions
To begin preparing your Pasta with Fava Beans and Guanciale, let’s start with the guanciale. Slice the guanciale into thin strips, then place it in a skillet over low heat, without adding any extra fat. The guanciale will release its fat and become deliciously crispy. Allow it to cook for approximately 15 minutes over medium heat, stirring often to ensure even crispiness.
While the guanciale is cooking, bring a pot of water to a boil. This will be used to blanch the fava beans for around 3 minutes—just enough time to soften their skins. Once done, drain the fava beans, reserving the cooking water to use later for cooking the pasta.
After blanching, the fava beans will be much easier to peel. Set them aside while you move on to the next step.
In the same pot of water where you blanched the fava beans, cook the Mezze Maniche Rigate pasta. Follow the package instructions, but cook it for a couple of minutes less than the suggested time to achieve a perfect “al dente” texture.
Once the pasta is ready, drain it, reserving a bit of the cooking water, and transfer it directly into the pan with the crispy guanciale. Turn the heat to low, then add the peeled fava beans and grated Pecorino Romano. To bring everything together, add some of the reserved pasta cooking water to create a smooth, creamy consistency.
Finish the dish with a generous grind of black pepper to taste. Stir everything together until well combined, allowing the flavors to meld beautifully.
