Prepare the Muthia Dough
- In a large mixing bowl, combine the grated radish and chopped radish greens.
- Add the bajra flour, whole wheat flour, and besan. Mix in the ajwain, coriander powder, cumin powder, hing, and turmeric powder.
- Incorporate the green chilli paste, ginger-garlic paste, chopped coriander leaves, sunflower oil, lemon juice, sugar, and salt.
- Gradually add a small amount of water to form a stiff, firm dough. Avoid over-kneading, as this can make the dough sticky.

Shape the Dough
- Divide the dough and shape it into logs about 1 1/2 inches in thickness. Form around 2-3 logs, depending on the size that is easy to handle.

Steam the Muthia Logs
- Preheat a steamer on medium heat and grease the steamer plate with a bit of oil.
- Place the dough logs on the greased plate, cover the steamer, and cook for 15-20 minutes.
- To check if theyβre done, insert a knife into one of the logs; it should come out clean.
