Coriander Powder (Dhania) 1 teaspoon
Cumin Powder (Jeera) 1 teaspoon
Asafoetida (Hing) 1/2 teaspoon
Turmeric Powder (Haldi) 1 teaspoon
Green Chilli Paste (or red chilli powder) 2-3 teaspoons
Ginger-Garlic Paste 2 teaspoons
Coriander Leaves, chopped Handful
Sunflower Oil 1 tablespoon
Lemon Juice 2 teaspoons
Sugar 1 teaspoon
Salt To taste
Sunflower Oil (for tempering) 1 tablespoon
Cumin Seeds (Jeera) 2 teaspoons
Fennel Seeds (Saunf) 1 teaspoon
Sesame Seeds (Til) 2 teaspoons

Instructions

  1. Prepare the Muthia Dough

    • In a large mixing bowl, combine the grated radish and chopped radish greens.
    • Add the bajra flour, whole wheat flour, and besan. Mix in the ajwain, coriander powder, cumin powder, hing, and turmeric powder.
    • Incorporate the green chilli paste, ginger-garlic paste, chopped coriander leaves, sunflower oil, lemon juice, sugar, and salt.
    • Gradually add a small amount of water to form a stiff, firm dough. Avoid over-kneading, as this can make the dough sticky.
  2. Shape the Dough

    • Divide the dough and shape it into logs about 1 1/2 inches in thickness. Form around 2-3 logs, depending on the size that is easy to handle.
  3. Steam the Muthia Logs

    • Preheat a steamer on medium heat and grease the steamer plate with a bit of oil.
    • Place the dough logs on the greased plate, cover the steamer, and cook for 15-20 minutes.
    • To check if they’re done, insert a knife into one of the logs; it should come out clean.
    • Remove from the steamer and let the logs cool slightly before slicing them into 1-inch-thick pieces.
  4. Temper and Fry

    • Heat oil in a non-stick pan over medium heat. Add cumin seeds, allowing them to sizzle.
    • Toss in the curry leaves (if using), fennel seeds, and sesame seeds.
    • Carefully add the sliced muthia and stir-fry them until they turn a light golden color.
  5. Serve

    • Serve the muthia warm, accompanied by a chutney of your choice, like a mint-coriander chutney or garlic chutney, for an authentic Gujarati experience.
