Instructions

Prepare the Haleem Mixture:
Begin by taking a pressure cooker and adding the soaked dals (daliya, chana dal, urad dal, and moong dal), mutton pieces, finely chopped ginger and garlic, and salt. Mix well. Add water as needed, just enough to cover the ingredients. Close the cooker and cook for 5 to 6 whistles on medium heat. Lower the flame and let it cook for an additional 5 minutes. Turn off the gas and allow the pressure to release naturally. -
Separate the Mutton and Grind:
Once the pressure has released, open the cooker. Remove the mutton pieces from the mixture and set them aside to cool. Once cool enough to handle, remove the mutton from the bones and discard the bones. Place the cooked mutton along with the dal mixture into a food processor and grind it to a smooth paste. Set aside. -
Flavor the Mixture:
In a separate pan, heat some ghee over medium heat. Add a pinch of saffron, finely chopped green chilies, red chili powder, turmeric powder, coriander powder, cumin powder, and chaat masala powder. Stir and mix the spices for about 2 minutes until they release their fragrance. Add the ground mutton and dal mixture to the pan, stirring to combine well. Cook the mixture for 3 to 4 minutes, allowing the flavors to meld together. -
Prepare the Kebab Mixture:
After the mixture has cooled, add gram flour and finely chopped mint to the mix. Stir everything together until the gram flour is evenly incorporated and the mixture is thick enough to shape into patties. -
Shape and Cook the Kebabs:
Grease your hands with a little oil and shape the mixture into round kebabs. Heat a pan and pour a small amount of ghee into it. Carefully place the kebabs into the hot ghee and cook on medium heat. Flip the kebabs once the underside turns golden brown and crispy. Cook the other side until it is similarly golden and crispy. -
Serve:
Once cooked, remove the kebabs from the pan and serve them hot. For the best experience, pair them with fresh coriander-mint chutney and thinly sliced onions. These Haleem Ke Kebabs are rich in flavor, tender on the inside, and perfectly crispy on the outside — a true North Indian delicacy to enjoy!
Tips & Variations
- For a spicier kick, feel free to increase the amount of green chilies and red chili powder.
- If you prefer a smoother texture, you can grind the mixture further in the food processor to get a finer paste.
- To enhance the richness, drizzle a little extra ghee over the kebabs just before serving.
