Instructions:
Step 1: Prepare the Raspberry Sauce
To begin, make the raspberry sauce. Place the raspberries and sugar in a saucepan and add the water. In a separate bowl, soak the gelatin sheets in cold water. Once the raspberry mixture has cooked, strain it to remove the seeds, and return the smooth liquid to the saucepan. Heat it again until it starts to boil. Add the squeezed-out gelatin sheets to the pan and stir well until completely dissolved.
Step 2: Mold the Raspberry Spheres
Pour the raspberry mixture into a silicone hemisphere mold, dividing it into 5 portions (approximately 80g each). Transfer the mold to the freezer and allow the raspberry spheres to chill for at least 3 hours. Set aside about 50g of the raspberry sauce at room temperature to use as decoration later.
Step 3: Prepare the Biscuit Base
Crush the chocolate digestive biscuits in a food processor. Melt the butter and let it cool slightly before mixing it with the crushed biscuits until the mixture is well combined. Take 5 round cutters (8 cm in diameter) and place them on a baking tray lined with parchment paper. Fill each cutter with about 50g of the biscuit mixture, pressing it down with the back of a spoon to form an even base. Refrigerate for about 30 minutes to allow the base to firm up.
Step 4: Make the Cream Cheese Filling
In a large bowl, beat the cream cheese with an electric whisk. Gradually add the heavy cream, pouring it in a thin stream while continuing to whisk. Once fully incorporated, add the powdered sugar and continue mixing until smooth. Transfer the cream cheese mixture into a piping bag fitted with a smooth 9mm tip and refrigerate until firm.
Step 5: Assemble the Cheesecake
Once all components are ready, begin assembling the cheesecake. Place each biscuit base onto a serving plate, gently removing the round cutters. Carefully remove the raspberry hemispheres from the silicone mold and place them on top of the biscuit bases. Pipe the cream cheese filling over the raspberry spheres, mimicking the look of a brain, or however you’d like to decorate them.
Step 6: Serve and Enjoy
